Most startups can't afford to start out of the gate with a full team of developers. If you are lucky, one of your founders is a technical founder and can build a large portion of the product without breaking the bank. This person may be able to build a great full-stack application, but given the urgency to get to the market, you will undoubtedly take some shortcuts (if you don't take any shortcuts, you may not be moving fast enough). If you aren't so lucky to have a technical co-founder or be technical yourself, you might try to find some contract workers to help build an MVP. They might be expensive, and don't quite care about the long-term vision of the product like you may need or be able to pay for. The answer is, that if you take the time to set up a good foundation, you can limit a great number of problems you will encounter along your journey and set yourself up to be able to iterate more quickly towards a viable and desirable product. The problems include security (authentication, authorization, fine grained user permissions, network security, etc.), infrastructure (scale, health checks, restarts from crashes, cost $$), ease of development patterns (which frameworks to use, which technical design patterns), etc. By attempting to offload a lot of these difficult technical topics and automate them away, we can have peace of mind, and more optimally utilize our technical and financial resources. This foundation is what I will be discussing.
